So last night, my boyfriend and I went to McDonalds. McDonalds is a place I've avoided for a year, and being there caused me to "let go" and just go overboard. I watch what I eat on a regular basis. It's really the medication that causes me to be this size, for the most part. Even so, I know that if I watched more closely I could lose at least some of the weight.The smell of the fries, the taste of the "secret sauce" from the Big Mac is just to die for. I ended up eating one Big Mac, and TWO SUPERSIZED FRIES! NOT what I planned to eat! It was great while I was eating, but when I got home I stepped on the scale and realized that in the past year I've gained 20 lbs. (3 lbs alone from eating at McDonalds!) I've gone up 4 pant sizes, and NONE of my old dresses, shirts, bathing suits, bras, etc. fit. I've known it, but I guess it's one of those things you sort of push out of your mind and avoid as much as possible.
Luckily, I made a plan a week ago to start Weight Watchers again TODAY. So last night was really just a goodbye to fast food, and being overweight. I want to beat Epilepsy in the sense that I will NOT let the medication make me live like this. I deserve to wear all the jeans in the back of my closet, and I deserve to be able to go out all day without looking in the mirror to see if I look fat or if my shirt is stretching out and exposing the tiny belly that I've developed in the last year.
So right now is halfway through the first day of Weight Watchers. It's going okay, but it's very hard to stay on track with all the food in our kitchen. I started to realize that even though I monitor my eating, I don't spend enough time staring at the calories and fat grams. No wonder I'm overweight! The medication plus the regular calorie intake I have a day must be killing me! I don't even want to see my arteries right now!
I decided to have a Light & Fit Yogurt for breakfast with half a cup of fresh raspberries (2.5 points) and a bottle of water (2 cups of water). After that, I sat down and started to "pre-portion" my snacks and meals for the next week. I measured my popcorn and put it in baggies, made a meal plan on Microsoft Excel, and made a delicious soup that I will eat twice this week and freeze for later. It's great because it's only 3 points for a 2-cup bowl! Here is the recipe (I made it myself!). I've decided to call it...
Mandy's Gluten-Free Weight Watcher's Soup
Makes 4 - 2 cup servings, 3 points
Ingredients:
1 box HillCreek Caldo de Pollo y Tomate (Tomato Chicken Broth, 2 LBS, Gluten/Fat-Free) + 4 cups Water
2 tbsp Gluten/Fat/Cholesterol/Preservative - Free and Low-Sodium Worcestershire Sauce
1 tsp Extra Virgin Olive Oil
1 tsp crushed Black Pepper
1/2 tsp Chili Powder
1/4 tsp Cumin
2 tsp Garlic Power (preservative and no salt added) OR 2 cloves fresh Garlic
1.5 Cups Pasta of Choice (Gluten-Free)
1 Large Onion, sliced super-thin
1 Large Tomato, diced
Juice of 2-3 lemons
1 Large head of Broccoli, diced, chopped or parted
Directions:
- Put Tomato Chicken Broth and water in a large pot. Cover lightly and heat until boiling on medium heat.
- Once broth is boiling, lower heat slightly and add everything except for pasta. Water will stop boiling, and begin to boil again when vegetables start to cook.
- Once the soup is boiling again, add the pasta.
- Allow pasta to boil for 5-8 minutes until soft enough for your preference. Then, turn off the stove and it's ready to eat!
- Serve hot or cold with 1 tbsp Parmesan cheese (1 point) and/or 8 pita chips (3 points).
- Allow the soup to fully cool down and you can pour it into freezer-safe Tupperware and freeze for use later!
