Life is like a PB&J...

Life is like a PB&J, isn't it? Life is just messy. So glad to have made it through this weekend without any seizures. I worked Saturday and Sunday night until close, and it felt like a huge accomplishment for me! I felt very light headed and "out of it" the whole time, and I was praying that I wouldn't have a seizure.
Being 17, and on the verge of 18, I have so many adult responsibilities. I have school, which is very important. I'm trying to graduate and find the right college... and get into it! Then there's my family. Enough said about that. There's housework... and plenty to go around, too. Then there's my two dogs. Constantly getting into trouble and making messes. Rudy (my one year old Aussie) has Whipworms (never heard of them until I found out he had them) and Mia (my 5 year old Chihuahua) most likely has them as well. Then there's my job, which is a hate-love type of thing. I would quit if I didn't have two dogs to take care of and so many needs of my own. It seems like I'm so busy feeding my dogs, buying tampons (can't wait to try that LadyCup!) and other necessities for my hygiene, and pitching in here and there that I don't even have enough to pay off my outstanding $200 bill and buy some new clothes. I SERIOUSLY need new clothes, by the way.
And then, there's the Epilepsy. Just looking at it makes me go "wow". This is what it's like to be an adult. The next 10 months or so will be hell trying to graduate, work, take care of things at home, and try to save money to help me out with college. It just gives me a headache.
I don't think I mentioned that I'm going back to homebound schooling because it's too hard to be at school for 8 hours straight. I get sick a lot and my doctor said I need more mid-day naps to help with the seizures. Too much stress I guess. I definitely believe it because look at last week: seizures out of the wahzoo!
I have a hard, busy, and stressful life, but it helps to have a few pass times like my art and my blogging.
Speaking of PB&J sandwiches, I know everyone is back to school and work and trying to stay healthy at the same time. So I thought I would post a little recipe that I put together for a quick and easy lunch that is a healthier alternative to a PB&J sandwich! I made it up myself just this morning!

You will need:
- 1/2 an apple (red or green or in between, whatever you prefer!)
- 2 tablespoons of peanut butter (or almond, hazelnut, sunflower seed butter if you don't like peanuts or have an allergy)
- 1 Nature's Own 100% Whole Grain Sandwich Rounds
- 1 tsp to 1 tbsp of organic honey
- Cinnamon to taste

Step one: Gather your ingredients. You can substitute the sandwich rounds for pita bread, wheat bread, or even white bread if it's all you have. I just prefer the Nature's Own sandwich rounds because they are only 100 calories for one round, full of fiber, and only 1 gram of fat.

Step two: Split your sandwich round in half and spread one tablespoon of peanut butter on each slice. This helps it all stick together in the end.

Step three: Slice your apples into thin slices and lay over the peanut butter on one half of your sandwich rounds. This recipe only called for one half of an apple, so you can eat the other half or just make two sandwiches.

Step four: Drizzle the honey over the apples until you feel like you've used enough. I only used a teaspoon of honey for mine, but you might like more on yours.

Step five: Sprinkle as much cinnamon as you'd like on top of the honey.

Step six: Take the other half sandwich round and top off your sandwich.

Step seven: Add a side of fresh cut celery, baby carrots or grapes. Then a glass of juice or milk and enjoy!

I made these sandwiches for the kids today and we all really enjoyed them. They asked me to make them for their lunches instead of the usual peanut butter and jelly sandwich that they always eat. This sandwich tastes great, and it's much healthier than eating those sugary jellies! I hope you all enjoy this recipe and have a great night!
